The Sagrantino vine, grown for centuries exclusively in Montefalco, seems to have been brought there from Asia Minor by the followers of St. Francis.

Harvest
Generally in mid-October. Manual harvesting of the grapes.
Vinification
Gravity filling of tanks, fermentation on the skins with maceration for 25-40 days. Spontaneous clarification without filtration.
Aging
Maturation in predominantly large oak barrels for at least 18 months. Resting in concrete tanks before bottling.
Tasting
Intense ruby red color. Nose rich and powerful, ethereal and complex. Typically characterized by notes of fruit and herbs, where citrus, cherry, berries, mint and oregano stand out. The palate is a very structured wine with firm and persistent tannins. A wine that is best expressed with long bottle aging.
Pairings
Accompanies grilled and roasted meats, braised or stewed red meats, game and aged hard cheeses.
Optimal drinking period
Montefalco Sagrantino generally reaches full maturity 10 to 15 years after harvest and is capable of bottle aging for more than 30 years.
